Ladies, finally it is summer time- which we absolutely love! It is also the season we decide to pull that bikini out of storage- yikes! I am sure we are all looking for some new recipes and lighter meal options to help us look and feel our sexiest in our bikinis (which seem to have oddly shrunk a size since last summer). Why not stick to an oldie but goodie and kick it up a notch with these few suggestions? I keep at least four avocados in my fruit bowl at all times. This might seem excessive but trust me, this fruit is fantastic! Avocado is excellent on its own and even more amazing when you whip it into a delicious, health promoting bowl of guacamole, yum! It is the perfect snack or even meal for the summer time.
Avocados offer a buttery, full texture and taste to the palate that will leave both your stomach and taste buds satisfied while limiting your caloric intake- what more could you ask for? This heart-healthy fruit offers the body plentiful amounts of “good” fat, lowers cholesterol, contains cancer fighting properties, and is full of Vitamins E, C, B6, folate, potassium and fiber. I place avocados very high on the totem pole of healthy as well as delightfully tasty foods. Who wouldn’t want a little slice of heaven on their salads, sandwiches, burgers- the list is endless.
However, if you want to step up your culinary skills and give your taste buds a treat- guacamole with vegetable chips is the way to go. Depending on your personal preference, add as little or as much of the following ingredients; lemon or limejuice, garlic, onion, jalapeno peppers, tomatoes, cilantro, salt and pepper. Personally I like to mash up 1 whole medium to large avocado and pour a layer of fresh lemon juice over the top to prevent browning. Then I add a few pinches of pepper and salt to taste. I use 1/4 of a red onion, 1-2 cloves of garlic, 1/2 of a large tomato, a handful of chopped cilantro, and 1-2 jalapeno peppers (if you are feeling daring try Serrano peppers or Habanera peppers). All of these ingredients offer your body great health benefits and taste fresh and delectable. Feel free to add some black beans if you want to make a meal out of it and get your protein in. This is also a wonderful option for those vegetarians out there and all those who are gluten-free, soy-free and dairy-free.
